Ingredients: 
  • 2 large potatoes, cubed
  • 1/2 cauliflower, cut into small florets
  • 1 onion, peeled and diced
  • 1 clove garlic, peeled and crushed
  • 4cm root ginger, peeled and grated
  • 30ml sunflower oil
  • 10g ground coriander
  • 10g ground cumin
  • 5g turmeric
  • 2.5g chilli powder
  • 10g mustard seeds
  • 400ml boiling water
  • Juice of 1 lemon or lime

 

Simple steps: 
  1. Fill a large saucepan with boiling water and cook the potatoes and cauliflower for around 8 minutes
  2. In another pan heat the oil and add the onion, add the garlic and spices
  3. Drain the potato and cauliflower and add to the saucepan
  4. Slowly add the boiling water, waiting until thickened to the consistency you would like
  5. Add the lime/lemon juice just before serving
