Banana Oat Pancakes

These pancakes are great on Shrove Tuesday - or as a healthier alternative to the usual pancake recipe!

Equipment: 
  • Hand blender/blender
  • Bowl
  • Tablespoon and teaspoon
  • Small Frying Pan
  • Turner for turning pancakes

 

Ingredients: 
  • 2 bananas
  • 2 eggs
  • 1/2 cup rolled oats
  • 1/2 teaspoon baking powder
  • Small amount of olive oil for frying

 

Simple steps: 
  1. Blend all the ingredients in a bowl or blender
  2. Cover the bowl and leave to stand in the fridge for 10-20 minutes
  3. Heat the oil in the pan
  4. Spoon 2/3 tablespoons into the pan
  5. Cook till firm enough to turn
  6. Cook till brown on both sides
  7. Serve with fruit and natural yoghurt
