Chicken & Sweetcorn Fritter

Equipment: 
  • Frying pan
  • 2 small bowls
  • Measuring spoons
  • Weighing scales
  • Grater or zester
  • Chopping board
  • Sharp knife
  • Mixing spoon
  • Fork

 

Ingredients: 

Fritters

  • 90g plain flour
  • 1.5 tsp baking powder
  • 3 eggs
  • 340g tin of sweetcorn, drained
  • 6 spring onions
  • Small handful shredded cooked chicken (approx 80g)
  • 1.5 tbsp fresh coriander
  • 1 red or green chilli
  • 1 tbsp vegetable oil

Yoghurt dip

  • 150g low fat greek yoghurt
  • 1/2 red chilli
  • Juice and zest 1/2 lime
  • Sprinkle black pepper

 

Simple steps: 

Fritters

  1. Shred the chicken, finely chop the coriander, spring onions and chilli
  2. Add all the ingredients to a bowl and mix well
  3. Heat the oil in a frying pan
  4. Dot several tablespoons of the mixture round the pan 
  5. Cook the fritters until the bottom turns golden then flip

Yoghurt Dip

  1. Finely chop the chilli and coriander
  2. Juice and zest the lime 
  3. Combine all ingredients in a bowl
