Christmas Cookies

These biscuits are great at Christmas-time as a special treat

Equipment: 
  • Baking sheets
  • Weighing scales
  • Mixing bowls
  • Spoons
  • Measuring spoons
  • Greaseproof paper
  • Wire rack for cooling
  • Saucepan

 

Ingredients: 
  • 80g unsaturated fat spread
  • 25g light muscovado sugar
  • 30ml honey
  • 100g self-raising flour
  • 100g oats
  • 30g mincemeat
  • 10g mixed spice

 

Simple steps: 
  1. Turn the oven to 170C/150C Fan/Gas Mark 3
  2. Line the baking trays with greaseproof paper
  3. Turn on the hob to a low heat, add the spread, sugar and honey in the pan and stir until melted, or melt in the microwave on high for one minute
  4. Stir in the flour, oats, spice and mincemeat and mix well. Cool for 5 minutes
  5. Roll tablespoons of the mixture onto the greaseproof paper and flatten gently
  6. Bake for 15 minutes or until golden
  7. Cool on the wire rack
