Easy Vegetable Soup

This delicious soup is perfect to warm you up when it's cold outside

Equipment: 
  • Sharp knife
  • Chopping board
  • Large saucepan
  • Measuring jug
  • Blender
Ingredients: 
  • 100g carrots, chopped
  • 50g celery, chopped
  • 1 onion, chopped
  • 300g potatoes, chopped
  • 700ml vegetable stock
  • 1 tsp oil
Simple steps: 
  1. Fry the onion gently with the oil in a large saucepan for 2 minutes
  2. Add the carrots and celery for another 2 minutes
  3. Add the potatoes and stock, cover and cook for 15 minutes until the vegetables are soft
  4. Blend the soup to a smooth texture

There's no need to peel the potatoes or carrots - the soup tastes just as delicious

If you would like to make the soup creamier add a spoon of creme fraiche after blending
