Enchiladas

A classic Mexican dish

Equipment: 
  • Sharp knife
  • Chopping board
  • Wooden Spoon
  • Grater
  • Deep oven proof dish
  • Frying Pan
Ingredients: 
  • 1 Jar or Carton of Passata
  • 500g of Chicken
  • 2 Different coloured Peppers
  • 1 Pack of Mushrooms
  • 2 Celery Sticks
  • 2 Medium Onions
  • 200g low fat cheddar Cheese
  • 6 -8 Wholemeal Tortilla wraps
Simple steps: 
  1. Chop up the chicken its bite-size chunks and fry them in a little oil
  2. While the Chicken is cooking chop up the rest of you ingredients
  3. Add the rest of the ingredients and Passata to the chicken and stir until they are soft and warmed through
  4. Once cooked spoon the mixture into the centre of a tortilla length way, Fold in the sides of the Tortilla approx 4cm and then roll making sure the ingredients do not fall out

Put the Enchiladas into the oven with cheese to make them crispy
