Lamb with Christmas Spices

A great alternative to turkey!

Equipment: 
  • Tablespoon
  • Teaspoon
  • 1 Large saucepan
  • Chopping board
  • Sharp knife
  • Wooden spoon
Ingredients: 
  • 1 large onion
  • 1 clove of garlic
  • 5cm fresh ginger (grated/chopped finely)
  • 1.5kg lean Lamb cut into chunks
  • 2 tablespoon ground coriander
  • 2 cinnamon sticks
  • 8 cloves
  • 6 cardamom pods
  • 2 bay leaves
  • 3 tablespoons ground almonds
  • 850ml beef stock
  • 250g dried apricots
Simple steps: 
  1. Fry onions, garlic and ginger for 15 minutes then add the lamb and fry until just brown
  2. Add the spices, and cook to release flavours for 2 minutes
  3. Add the almonds and pour in the stock
  4. Cover the pan for 45 minutes stirring occasionally on a low/medium heat
  5. Add the apricots and simmer for 15 minutes until the lamb is tender

Replace Lamb with diced stewing steak and apricots with pitted prunes.

Great served with basmati rice
