Lemon cake

Equipment: 
  • Loaf tin
  • Greaseproof paper
  • Mixing bowl x 2
  • Mixing spoons
  • Scales
Ingredients: 
  • 100ml low fat yogurt
  • 120ml lemon juice
  • 1/2 tbsp vanilla extract
  • zest one lemon
  • 130g white flour 
  • 1/2 tsp baking soda
  • 100g sugar
Simple steps: 
  1. Preheat oven to 350 F.
  2. Line the loaf pan with greaseproof paper, and set aside
  3. In a bowl, whisk the lemon juice, yogurt, vanilla extract, and lemon zest
  4. In a separate bowl, stir together all remaining ingredients
  5. Pour the wet mixture into the dry mixture, and stir just until evenly mixed
  6. Smooth into the loaf pan, and bake 25 minutes or until loaf has risen 
  7. Let cool and serve
