Roasted Tomatoes

Perfect as a side dish, for with a BBQ, or as the base for a salad

Equipment: 
  • Sharp knife
  • Chopping board
  • Baking tray
  • Garlic press
  • Serving dish
Ingredients: 
  • 4-6 vine tomatoes, halved
  • 4-6 plum tomatoes, halved
  • 6-8 cherry tomatoes, halved
  • 4 garlic cloves, pressed or sliced
  • ½ bunch thyme
  • 3 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • Black pepper to season
Simple steps: 
  1. Pre-heat the oven to 160C (140C for a fan oven) / Gas Mark 3
  2. Chop the tomatoes and garlic (or use a garlic press if preferred) and place onto the baking tray
  3. Drizzle the tomatoes with the olive oil and balsamic vinegar
  4. Add the thyme and black pepper
  5. Roast for 60 minutes

Delicious served with rocket or watercress as a salad
