Sizzling Breakfast Muffins

These are great made up in advance for a grab and go breakfast

Equipment: 
  • Weighing scales
  • Muffin cases & tray
  • Mixing bowl
  • Spoons
  • Sharp knife
  • Chopping board

 

Ingredients: 
  • 4 rashers lean bacon
  • 250g self raising flour
  • 5g bicarbonate of soda
  • 85ml sunflower oil
  • 2 eggs
  • 100ml semi-skimmed milk
  • 100ml low fat natural yogurt
  • 3 spring onions, finely sliced

 

Simple steps: 
  1. Grill the bacon under a hot grill until cooked through, set aside
  2. Preheat the oven to 200C/180C Fan/Gas Mark 6
  3. Mix together the bicarbonate of soda and flour in the bowl
  4. Beat the eggs and add to the oil in a measuring jug
  5. Add the milk and yogurt to the egg mixture
  6. Cut the bacon into small pieces and add to the mixture with the spring onions
  7. Combine the flour with the rest of the ingredients
  8. Spoon into paper cases
  9. Bake for 15-18 minutes
