Turkey and Cranberry Salad

A great way to use up leftover turkey

Equipment: 
  • Chopping board
  • Sharp knife
  • Frying pan
  • Measuring jug
Ingredients: 
  • 300g pre-cooked turkey
  • 4 teaspoons olive oil
  • 2 red onions
  • 200g salad leaves
  • 1 small cucumber, chopped into bite size pieces
  • 25g dried cranberries
  • 50g cranberry sauce
  • 30ml lime juice
  • 2 tablespoons water
Simple steps: 
  1. Using the oil fry the onions in a large frying pan for 5 minutes or until soft
  2. Add the turkey and cook until heated thoroughly
  3. Mix the cranberry sauce, lime juice and the water in a jug into a dressing
  4. Arrange the onions, leaves, chicken, dried cranberries and cucumber on the plates
  5. Drizzle the dressing over and serve

You can use chicken instead of turkey if you prefer

Add tomatoes or other veg to make a colourful plate!
